He sculpts shapes, manipulates textures, and produces aromas while always delivering flavors that are crisp and pure. The dishes, prepared with machine-like precision, often leave diners in awe while they wonder how he turns ingredients into a completely unexpected experience. In an era when conceptual dining has become less popular, Aduriz’s kitchen manages to reconcile provocation and enjoyment to such an extent that a seat at this beautiful restaurant in the hills above San Sebastian is difficult to come by.
