After more than 40 years and three generations working out of the same building in the town of Humanes, the Sandoval family decided to move their family-style restaurant to one of the most exclusive neighborhoods in Madrid. Mario Sandoval’s award-winning cuisine is based on the use of magnificent raw materials, with which he achieves highly elaborate preparations tinged with a nod to the cuisine of Central Europe. Brothers Rafael and Diego run the service and the wine cellar with the same level of dedication that their brother devotes to the kitchen.
