Alija likes to focus on the less obvious aspects of the ingredients he works with, making his cuisine one of the most avant-garde in the country, while remaining completely natural. Alija is known as a chef’s chef, and it is not unusual to hear the country’s top chefs say Nerua is one of their favorite places to eat in Spain.
