Ricard Camarena, a superstar among the Spanish dining community, broadens the horizons of traditional Valencian cuisine. His approach utilizes the unique access he has to the wonderful seafood that surrounds this coastal city, as well as the best farm products from the region's interior. A thorough grasp of culinary technique allows him to manipulate temperatures, flavors and textures to create a cuisine without any pretension. There are two menus to choose from, and masterful sommelier David Rabasa oversees the dining room to complete what some describe as a dream experience.
