One of Italy’s most unique restaurants is located on the islet of Mazzorbo, a short steamboat ride from Venice, although it feels as if it’s a world away. A walled vineyard adorned with a 14th-century bell tower contains the beautiful vegetable garden where Chiara Pavan and Francesco Brutto grow many of the ingredients that make up their vegetable-forward cuisine. Dinner depends on what the garden has to offer: gnocchi with unripened figs and tarragon oil (green and pungent rather than sweet) or risotto with tomato water, filippendula (the herb meadowsweet, grown on the estate) and raw scampi from the Adriatic.
