This "temple of tuna" is where José Melero offers his customers endless ways to experience the majestic bluefin tuna. Melero classifies each part of the fish, employing recipes calibrated to the volume of fat found in the cut. Dishes range from raw and salted preparations to more traditional stews as well as a few avant-garde creations. It is a unique experience that you won’t find anywhere else. Almadraba tuna season, which runs from early May through the beginning of June, is the best time to visit.
