Restaurants in moneyed resort towns tend to be boring, reliant as they are on tourists for a few months throughout the year. Lux Lucis, inside the recently renovated and chic luxury hotel Principe Forte dei Marmi, in Tuscany, is a welcome exception. From a terrace overlooking both the maritime pines of the coast as well as the Apuan Hills, Valentino Cassanelli offers a cuisine that includes a profound sense of terroir with a touch of humor, which shines in dishes such mantis shrimp “marble” (made with cocoa butter), reminiscent of the stone that comes from the nearby caves of Carrara.
