A passionate advocate of sustainable fishing and preserving the most authentic version of Italian coastal cuisine, Pascucci works tirelessly to maximize the flavors of the sea: prawns served on a brick of dry salt, flavored with the smoke of burnt herbs and vaporized citrus essence. A simple panino meant for a seaside lunch is transformed with bonito tartare, mustard, mayonnaise, wild herbs and ponzu sauce.
