Simon Rogan’s Soho chef’s table Aulis reopened in the summer of 2023 after a plush new look that saw it add a lounge and upsize from 8 seats to 12. Executive chef Oli Marlow has the pick of produce from Rogan’s Our Farm in Cartmel, just down the road from L’Enclume, which he shows off in meticulously executed dishes of Orkney scallops, wild chamomile, buttermilk and smoked pike perch; truffle pudding caramelized in birch, fermented black garlic and summer truffle; and cherries and raw milk ice cream.
