In 2002, after more than 100 years of his family running the famous Echaurren Hotel and Restaurant, Francis Paniego surprised the Spanish gastronomic community by adding this fine dining restaurant to his family’s portfolio. The evening starts with snacks in the gallery before you move to the bar for a couple of appetizers. Once you’re seated at your table, Paniego will serve you a tasting menu of 19 courses featuring dishes like tear peas with pear and cod cream or sweetbread tempura ravioli with crème fraîche and caviar. A section of the wine list is dedicated to the historic wines of Rioja.
