While the province of Valladolid is famous for its roasted baby lamb, fine dining options are severely limited. Ambivium, set among the vineyards of the Pago de Carraovejas winery and offering stunning views of the Castle of Peñafiel, was intended to correct the situation, and their entry onto the 2023 OAD Top Restaurants List is evidence of their success. Cristóbal Muñoz’s menu pays attention to tradition. His escabeche of oysters mimics a method used in the 17th century to transport oysters from Galicia to London; notable as well as are his classic preparations, such as glazed sweetbreads topped with black truffle.
