Safe Cruz has brought the cuisine of his native Canary Islands to Madrid. Diners from North America will find the cooking – a mix of Mediterranean and African cuisines – reminiscent of Caribbean fare. Dishes range from starters like a sandwich of marinated roast leg of pork with fresh cheese and paprika or sweet potato from Lanzarote with mojo and cod, while mains include flanken ribs with pineapple served with a monkfish stew or creamy corn and potato soup with beef cheeks and roasted chickpeas.
