This is a classic osteria (“tavern”) located in the courtyard of an early 1900s farmstead in the heart of the Piacenza valleys. Why “ostreria”? Because of the three (tre, in Italian) brothers Pavesi operating it. The menu features all the usual suspects of the regional cuisine of Emilia – beautiful coppa, pancetta and salami (the three salumi from Piacenza) served alongside giardiniera (pickled vegetables). It also ventures into some classic dishes of the aristocratic cuisine, such as the memorable bomba di riso (literally, “rice bomb”), a rice pie, made according to tradition, with pigeon ragù and dried porcini mushrooms.
