How does a chef preserve the classic dishes that he created over the past 30 years and that people still want to enjoy, but that have now been replaced by new inventions so as to keep up with the times? Massimo Bottura and Lara Gilmore decided to open an inn in an 18th-century country house that features a restaurant called Francescana at Maria Luigia, where the tasting menu features many of Bottura’s most iconic dishes. Though only a short drive from the center of town, the grounds manage to capture the agricultural landscape of the Emilian countryside.
