Opened in 2007 by Claudio Liu, of the same Liu family that operates some of the most ambitious and successful Asian restaurants in Milan, Iyo combines perfectly executed sushi and sashimi preparations with fusion cuisine. Make sure not to miss some of chef Katsumi Soga’s more inventive dishes, like ika somen, with raw squid, quail egg, Royal Oscietra caviar, crispy vegetables and soba dashi sauce or the Suzuki ceviche: seabass carpaccio with sudachi sauce, spicy rocoto, red onion and chervil.
