When chef Michelangelo Mammoliti left La Madernassa, it was unclear whether this beautiful resort in the Langhe would find a replacement who would maintain the same high level of quality. But brothers Giuseppe and Francesco D’Errico have met the challenge, brilliantly interpreting the natural ethos of the place, with its view overlooking the Monviso and the arc of the Alps, the vast vegetable garden and ingredients foraged in the surrounding forest, which turn up in dishes like curdled milk with confit egg yolk, peas and prosciutto crudo or asparagus tonnato, white asparagus with tuna belly.
