Following a stint at Noma, Christian Mandura went back to his native Chieri – in the outskirts of Turin – and started serving an amuse-bouche of unseasoned leaves at the very old-school family trattoria Geranio, to much bewilderment. A lot of time has passed since then, and Mandura has opened one of the most interesting new restaurants in Turin in recent years. At Unforgettable, there’s a single table for 10 people, and a tasting menu that has vegetables at the center of the plate (literally) and animal protein as a side. A second menu, Paradigma, is about serving an animal in all its parts.
