The most contemporary restaurant in Seville is where we find an exemplary version of Modern Spanish cuisine. Julio Fernández has the utmost respect for high-quality products, and his well-prepared cuisine mixes innovation with familiar flavors. There are also glimpses of how the traditional cooking of Andalusia has been influenced by Arabic culture, like a dish of caramelized sweetbreads with Moorish-style cream. The food is wonderfully priced — the 13-course tasting menu costs only 90 euros — and is served in a spacious and bright dining room.
