Located in what used to be a stained-glass factory in the city’s Ensanche district and now part of the Eneko Atxa Group, this is the gastronomic offering from chefs Fernando Canales and Mikel Población, who established their reputation at their more casual restaurant, La Despensa del Etxanobe. The duo have managed to bring the same level of excellence to their fine dining concept, often featuring fish sourced from the Laredo market, like a carabinero prawn boiled in an umami broth or tuna cooked with sumac and locally grown wasabi.
