This fourth-generation family business, located in Madrid’s Valdemoro neighborhood, is run by Chef Iván Muñoz and his sommelier brother, Raúl. He offers a seasonal cuisine while keeping some of the house’s classic dishes on the menu. There are five tasting menus on offer; the largest one, a 20-course affair titled Menu Degustacion Tajo, includes dishes like oysters with tomato ice cream, a soup of langoustines and garlic, socarrat rice with aioli and suckling Iberian pig with potato soufflé. You can also order from the à la carte menu.
