In the Salamanca district, next to the secret garden of the Hotel Único, is one of the most sophisticated kitchens in Madrid. The décor is modern, with well-spaced tables and comfortable chairs, a perfect setting for the cuisine of a chef who surprises with a succession of dishes in which tradition and the avant-garde coexist. An extensive à la carte menu features creations like an omelet of cod tripe with Santa Pau beans and socarrat rice with red prawns, creamed chard and bacon. There are also 20- and 25-course tasting menus.
