Though chef Paco Roncero is not that well known outside of Spain, natives know him for running one of the top modernist kitchens in the country. Located on the terrace of the Casino of Madrid, Roncero offers a menu featuring classic dishes like a pie of lemon cod and brandade, beans with langoustines and coconut or veal tail with a duxelle of Iberian ham and mushrooms. Professional service, a well-thought-out cellar and one of the most bveautiful dining rooms in Madrid cap off the experience.
