The cuisine of the Manchego region of the Castilla-La Mancha is not as well known as other regional cuisines of Spain. At his restaurant, Miguel Carretero does his best to introduce its flavors to the fashionable diners of Madrid’s Salamanca district. He offers two different concepts: La Barra, on the ground floor, features a menu of tapas, and the upstairs dining room serves dishes such as onion soup with vin jaune and a Manchego fritter or morels stuffed with chicken in a pepitoria sauce. The wine list offers more than 350 references.
