Chet Sharma swapped his lab coat for chef’s whites when he left Oxford University (where he got his physics PhD) to work at Mugaritz. He’s worked at a veritable Ivy League of big names since, mostly on the R&D side, including The Ledbury, Moor Hall and L’Enclume. BiBi, in Mayfair, launched in 2021, sees him partner with JKS Restaurants (Gymkhana, Sabor, etc.). It’s petite but punches above its weight with super-seasonal, inventive Indian dishes such as Lahori chicken with wild garlic and morels; Cornish cuttlefish with peanut salad, truffled buffalo milk paneer; and Kashmiri saffron baba.
