Paul Walsh (ex Savoy Grill and Restaurant Gordon Ramsay) executes the group’s classic contemporary style with finesse and a subtle Asian accent. Highland venison and red cabbage gets its own braised shoulder bao, for example, while Orkney scallops and truffle come with pickled pear and shimeji.
