The Latymer is the fine-dining restaurant at luxury hotel and spa Pennyhill Park in Surrey, an hour outside central London. It’s in the old part of the property, where wooden beams set off the plush carpets and opulent velvet. Steve Smith learned from the masters of Modern British Cuisine: Shaun Hill, Paul Heathcote, Simon Gueller. His six-course tasting menus feature painstakingly crafted plates of fine ingredients, such as Cornish sea bass, Roscoff onion and smoked eel or Aynhoe Park venison, blackberry and chocolate.
