Woven by Adam Smith opened at the Dorchester Collection’s Coworth Park country house hotel in Berkshire in autumn 2022, replacing Restaurant Coworth Park. Ritz-trained Roux Scholar Adam Smith has been at the Georgian property since 2016, and now is his time to shine. The restaurant’s had a slick designer makeover, with two floor-to-ceiling wine cellars holding a fairly large numbers of bottles from British winemakers. Smith represents the new old school, with stuffed morels, Ogleshield, three-cornered leek, turbot jubilee and lobster mousse.
